UBMA is excited to welcome back our friend and supporter Chef Chris Donaldson, professional private chef to NFL players and their families. Chef Chris is passionate about food, and understands how to properly plan, prepare and execute heart healthy meals. He is thrilled to share, speak and cook with our community virtually as we all enjoy an evening preparing a heart healthy meal together. Last year, we cooked Chile Salmon w/ Quinoa & Butternut Squash Hash together (*see Instagram plated photo below). Might sound intimidating to some but it was truly simple to make, so delicious to share with our families, and most importantly we had LOADS of fun cooking together.

We will also be gifting at random selection two deserving moms who RSVP and attend, with $100 grocery gift cards at the end of the evening, to help kick-start and/or maintain your healthy eating journey.

RECIPE: Thai Mango Salmon w/ Cilantro lime Cauliflower rice (recipe serves 2)
-Scottish Salmon (or Atlantic)- Two 6oz pieces
-1 tsp Pink salt
-1 tsp ground ginger
-1 tsp turmeric
Thai mango sauce
-1 mango julienned (Thinly sliced strips)
-1 granny smith apple Julienned (Thinly sliced strips)
-1 red red onion julienned (Thinly sliced strips)
-1/2 bunch of cilantro chopped
-1/4 cup honey roasted (unsalted) Cashews (*if nut allergy, omit the nuts)
-1 teaspoon Fish sauce
-1 tablespoons coconut sugar
-2 tablespoons coconut aminos
-1 Lime squeezed
-1 bag of cauliflower rice
-1 tablespoon coconut oil
-1 tablespoon plant based butter
-1 limes squeezed
-1/2 bunch chopped cilantro
